Maintenance of Polished Carrara Marble Mosaic tile

Hi We are just about to tile our kitchen splashback with polished carrara marble mosaic tiles . Was this a wise choice as I am now a little scared of the high maintenance involved? If I use them, do they need to be sealed before installation and / or after and what should I use to clean them.
TileProf says:
It will probablly be okay if you are aware that Marble, especially Polished Marble is Acid Sensitive, and things like Coca-Cola, Tea, Coffe, Orange juice, Vinegar Red and White wine all have Acid properties to them, so as long as you dont spill them this will be fine. Granite is the preferred choice for a Kitchen as these products have little effect on it. Russell Taylor Tile Doctor Ltd
